Breakfast Casserole {Crock Pot}

This weekend I added tabs to my  blog! Did you notice? I can't believe I didn't do it sooner but I am so glad to have it done now. My favorite feature is the Recipe Index. I have a lot of great recipes! But I was surprised to see I only have 5 Crock Pot recipes. I seriously need to add more since I love to use the Crock Pot and I do every Sunday. So for both of our benefits I will be sharing more Crock Pot recipes with you! I have another one coming this Thursday and more ideas in the works.

My mother-in-law makes this amazing breakfast casserole and I have been meaning for months to get the recipe from her. Well, I finally did and we had this for dinner this Sunday. It was amazing! It's so easy and versatile. You can add whatever breakfast meat or vegetables you'd like. You layer on hash browns (or diced potatoes), breakfast meat, vegetables and cheese. Then you top it of with eggs. It's one of my favorite breakfast casseroles. I love how good it tastes!


You add the top layer of cheese right before it's ready. Delicious!

*Update: I made this again and instead of using hash browns I diced up potatoes, (left the skin on) and it was even more delicious! I highly recommend it!

Breakfast Casserole {Crock Pot}
Love to be in the Kitchen Original Recipe
Ingredients:
3-4 Russet Potatoes, scrubbed and rinsed and diced into small cubes or 1 lb. frozen cubed hash browns
1 lb. cooked breakfast meat (sausage, crumbled bacon, ham or a mix)
1-2 peppers (red, green or yellow), chopped
1/2 cup onions, chopped
1 can green chilies
grated cheese (pepper jack, cheddar or a mix)
1 dozen eggs
1/4 cup milk
salt and pepper to taste

Directions:
Spray crock pot with non-stick cooking spray. Layer the ingredients in this order, diced potatoes or hash browns, dash of salt and pepper, meat, vegetables, green chilies and cheese. Repeat twice but on the second layer don't add the cheese yet.

In a medium bowl, beat together the eggs, milk, salt and pepper. Then pour over the layers in the crock pot. Cook on low for 5-6 hours. Right before serving remove any liquid from the top of the casserole then spread grated cheese on top the last few minutes of cooking.  Serve when melted.
