Growing up sausage gravy and biscuits was a breakfast item I would avoid. It actually wasn't until 2 years ago when I had it with my in-laws I realized I actually really liked it! A couple of weeks ago I was watching Brunch with Bobby and he made sausage gravy and biscuits. Since then I have been craving it! I looked up his recipe which of course had a very long ingredient list and wasn't super healthy and I decided to make up my own healthier version and this is what I came up with. I used my whole-wheat biscuits I shared with you yesterday and it was very good!
Sausage Gravy & Biscuits
Recipe adapted from Bobby Flay
Ingredients:
1 pound low-fat breakfast sausage, cooked
2 cups milk
2 tablespoons unsalted butter
2 tablespoons flour
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Directions:
Put the milk in a small saucepan and bring to a simmer over medium heat. Melt the butter in a second small saucepan over medium heat, whisk the flour and cook for 1 minute, do not allow. the flour to color. Slowly whisk in the warm milk, increase the heat to high and continue whisking until the sauce begins to thicken and the raw taste of the flour has been cooked out, about 5 minutes; season with the salt and pepper. Stir in the cooked sausage and serve over biscuits
