Have you had a fresh peach lately? For at least a year now all the peaches I've had have been canned peaches. Canned peaches are good. But then my sweet mother brought me a bucket load of freshly picked peaches! My uncle has a ton of peach trees close to my house. My dad helps take care of it so they pick as many peaches as they want. I had forgotten how good fresh peaches are! So tasty and yummy.
My neighbor saw me with my bucket load of peaches and suggested that I can them. But why would I want to can them? Then I would just have canned peaches. And I am sure when you can your own peaches it tastes better than store bought peaches but still. That's not what I wanted. So I froze them! That way I can just take some out, slightly thaw them and serve them with dinner, use them whenever for a smoothie or just grab some for a yummy and healthy snack!
I'm going to call this Peach week and I will share with you a few very yummy and simple peach smoothie recipes!
If you ever have tons of peaches here is an alternative to canning for you.
How to Freeze Peaches
7-10 ripe peaches
1/4 cup lemon juice
2 tablespoons sugar
Rinse peaches in cold water. Cut all the way around the middle of the peach. This cut will not go all the way through because of the pit. Then gently twist open the peach in half. You may need to use the knife to help. Discard the pit. Cut the peach into slices discarding any soft spots. Place peach slices in a bowl and continue until all peaches are sliced. Add the sugar and lemon juice to the sliced peaches.
Take a baking sheet and line with wax or parchment paper. Place peaches on wax/parchment paper, evenly spaced. Freeze for a couple of hours or until hard. Then remove from freezer and place sliced peaches in a freezer zip lock bag and press out all the air. Enjoy whenever!
*Note: I did not peel my peaches but if you want to here is a quick and easy way to do it.
-Cut an x on the bottom of the peaches.
-Boil peaches for 40 seconds.
-Place peaches in ice water for 30 seconds.
-Remove and peel skin. The skin will easily come off.
