No-Bake Energy Bites


I've been excited to make these energy bites for a while now.  I finally got around to it today and I am so glad!  It was so fast to make and they are so good!  The recipe is very flexible and you can adjust it according to your tastes.  

It's basically rolled oats mixed with peanut butter and honey and the rest is up to you.  The original recipe called for 1 cup of shredded coconut but I'm not a huge fan so I just added 1/2 a cup.  Like I said it's very flexible so if you don't like coconut you don't have to add it and can add more of another ingredient.  You can add about any add-in you think would go well.  I made mine with some dark chocolate chips because I love chocolate and dark chocolate is good for you!

These keep in either the fridge or freezer.  I put a few in the freezer to see which I liked better and I vote for the freezer.  Either way is great though! For young children I recommend keeping them in the fridge and making them smaller.

I often am in need of a quick little snack to give me a little more energy to make it through the day. (Especially since I'm pregnant!) I get tired of the same old snack so I'm excited to have something new when I need a snack.

These can also easily be an on the go snack, just pack them up in a little zip lock bag and you are good to go!  

No-Bake Energy Bites
Recipe adapted from Food Doodles

Ingredients:
½ cup peanut butter
1/3 cup honey
1 teaspoon vanilla
1 ½-2 cups old fashioned rolled oats
½ cup-1 cup shredded coconut
1/4-1/2 cup other add-ins (dark chocolate chips, mini-chocolate chips, dried fruit, roughly chopped nuts or seeds, etc…)
Optional: 2 tablespoons to ¼ cup wheat germ, ground flax seed or whole wheat flour

Directions:
In a large bowl add the peanut butter, honey and vanilla.  Stir to combine.  Once combined add the rest of the ingredients.  Mix well.  If too sticky add more dry ingredients such as oats.  Place in the fridge for about 30 minutes.  Remove from fridge, scoop out some dough and roll into a ball.  It helps to squeeze the handful together to compact it and then roll it into a ball. If hands become too sticky rinse hands and continue.  Place balls in an airtight container or zip lock bag in the fridge or freezer for a quick and easy snack.
