Roasted Red Potatoes with Rosemary



I'm not exactly sure what my absolute favorite food is but I do know that I love potatoes in about any form they are cooked up.  These roasted red potatoes are one of my favorite things you can do with a potato!  I love how they are slightly crunchy but soft in the middle and full of flavor. They are also very fast to prepare. You just cut them up, put them in a bowl add only a few ingredients, mix it up and and cook it up!


My brother and his wife live only a couple of minutes from my house so since moving close to them we take turns having them over and them inviting us for dinner.  He invited us over when he bought his new fancy Weber grill to try a variety of steaks.  It was so good and I brought along these yummy potatoes for a perfect side dish.  Everyone loved it!


Roasted Red Potatoes with Rosemary
Slightly adapted from The Food Network (Robin Miller)

Ingredients:
6 to 8 small red potatoes, quartered into ½ inch pieces
1 tablespoon olive oil
1 tablespoon minced fresh rosemary (or 1 tsp dry rosemary)
½ teaspoon salt
¼ teaspoon ground black pepper

Directions:
Preheat oven to 425 F.

Combine all ingredients in a large bowl and toss to coat potatoes.  Transfer potatoes to a large baking sheet or shallow roasting pan.  Roast 20-25 minutes, until tender and golden.

  1. This is Gus' favorite way to eat potatoes! You can also cut up chicken in chunks and toss it in with the potatoes and bake and you have a super easy complete meal!
