These cookies are AMAZING! I love regular pumpkin chocolate chip cookies but these are even better! And the best part is they are healthier as well. This recipe calls for 1 cup whole wheat flour and 1/2 a cup of all-purpose flour. If you don't have whole wheat flour you can just use 1 1/2 cups all-purpose flour but please sometime soon go out and buy some whole wheat flour! I find no difference in taste plus whole wheat flour has a lot more nutrients! Also, this recipe uses less butter than most regular pumpkin chocolate chip cookies and has oats.
I made these the other day and we gave some to our neighbor who is pregnant and had just been craving pumpkin cookies that night! How funny and perfect. Shortly after returning home they texted us to thank us and tell us that they LOVED these cookies!

Pumpkin-Oatmeal
Chocolate Chip Cookies
Adapted from Sweet Treats and More
Ingredients:
1 cup
whole wheat flour
½ cup all-purpose flour
¾ cup granulated sugar
¼ cup brown sugar
1 tsp salt
¾ cup granulated sugar
¼ cup brown sugar
1 tsp salt
½ tsp
baking soda
¼ tsp
nutmeg
¾ tsp
cinnamon
½ cup butter, soft
1 egg, beaten
1 cup canned pumpkin
1 ¾ cup rolled oats
1 ¼ cup semi-sweet chocolate chips

Directions:
Preheat oven to 375 degrees
1. In a mixing bowl, stir together flour, sugars, salt, baking soda, nutmeg, and cinnamon.
2. Mix in butter, mixing until crumbly.
3. Stir in egg and pumpkin. Then the rolled oats and chocolate chips.
4. Drop heaping spoonfuls onto baking sheet lined with parchment paper or a silpat.
5. Bake 10-12 minutes.
