Cheese and Bacon Potato Rounds


This recipe is a fabulous find from Pinterest.  It was so quick to put together.  It's very similar to potato skins but so much faster to make and I actually liked this better.  I loved the crispiness of the potatoes and of course the amazing taste the cheese and bacon brought to it.  You could even dip these in sour cream.  You could serve these either as a side-dish or an appetizer.

Cheese and Bacon Potato Rounds
Recipe adapted from All Recipes
Ingredients:
4 baking potatoes, cut into ½ inch slices
¼ cup melted butter
8 sliced bacon-cooked and crumbled
Cheddar cheese
Green onions

Directions:
Preheat oven to 400 F.  Brush both sides of potato slices with butter; place them on an ungreased cookie sheet.  Bake in the preheated 400 F oven for 30-40 minutes or until lightly browned on both sides, turning once.

When potatoes are ready, top with bacon, cheese, and green onions; continue baking until the cheese has melted.
