This recipe is a fabulous find from Pinterest. It was so quick to put together. It's very similar to potato skins but so much faster to make and I actually liked this better. I loved the crispiness of the potatoes and of course the amazing taste the cheese and bacon brought to it. You could even dip these in sour cream. You could serve these either as a side-dish or an appetizer.

Ingredients:
4 baking potatoes,
cut into ½ inch slices
¼ cup melted
butter
8 sliced
bacon-cooked and crumbled
Cheddar cheese
Green onions
Directions:
Preheat oven
to 400 F. Brush both sides of potato

minutes or until lightly browned on both sides, turning once.
When
potatoes are ready, top with bacon, cheese, and green onions; continue baking

Think I will try this recipe. It is so simple and obvious really but just never thought of it before.
