Oatmeal-Flax Chocolate Chip Cookies


I have a confession to make. I am truly obsessed with the Food Network.  I had never heard of it until I got married because our apartment came with free cable. I instantly fell in love with it and thankfully my husband loves it too. I find it interesting to watch people cook and I love all the ideas they have. Six months after getting married and discovering the Food Network my birthday came along and my husband surprised me with the best birthday present EVER! A 3 year subscription to the Food Network magazine! I was thrilled! Little did he know that birthday present will never end because I will always subscribe to their magazine.


Every time my new magazine comes I get so excited and always take a picture and text it to my husband. I'm kind of nerdy like that I guess! I usually read it in a day or two although Derek tells me I shouldn't read it so fast so I can enjoy it longer but I can't help myself. Well last week my January magazine came and I came across this recipe and marked it. Then later that night Derek's parents called to invite us to watch the NCAA Football National Championship game with them and asked us to bring dessert. So of course I decided to make these cookies!


There were quite a few people at the house for the game and these cookies were gone in no time at all. I even saw a few people going back for seconds and thirds! And honestly of all the things I've ever made I had the most compliments on these cookies! And no one at all noticed there was flax seed in it! 


These cookies are awesome.  They have oatmeal in it but it wasn't too oatmealish to me if you know what I mean. It was there and you could tell but it wasn't too much.  These cookies flatten out as they cook but I like that about them. They are different than most cookies. They are chewy but still have a slight crunch to it. I loved it! Everyone loved it! And even though it's not necessarily a healthy cookie it's a nice way to enjoy a chocolate chip cookie while still enjoying the health benefits of flax seed. And like I said no one will even notice it!  I can't wait to make these again for my family party this Sunday.


Oatmeal-Flax Chocolate Chip Cookies

Ingredients:
1 ½ cups all-purpose flour
1 cup quick-cooking oats (or old fashioned oats)
¼ cup flax seed, finely ground in a spice grinder, or pre-ground flaxseed
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
12 tablespoons (1 ½ sticks) unsalted butter, softened
1 cup granulated sugar
¾ cup packed dark brown sugar
2 large eggs
1 teaspoon vanilla extract
1 ¼ cup semisweet chocolate chips


Directions:
Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.

Whisk the flour, oats, flaxseed, baking soda, salt and cinnamon in a bowl.

Beat the butter, granulated sugar and brown sugar in a large bowl with a mixer on medium-high speed until fluffy, about 4 minutes.  Beat in the eggs one at a time, beating well after each addition.  Beat in the vanilla.  Reduce the mixer speed to low; add the flour mixture and beat until just combined, scraping down the bowl as needed.  Stir in the chocolate chips.

Drop heaping tablespoonfuls of dough onto the prepared baking sheets, about 2 inches apart.  Bake until golden brown, 10 to 12 minutes.  Let the cookies cool 3 minutes on the baking sheets, then transfer to racks to cool completely.
