Here it is. SPECIAL DARK Cocoa! Hello gorgeous! Mmmm! I am a lover of dark chocolate but yet hadn't heard of this before. And if you happen to not be a fan of dark chocolate (sorry! for you) then you can make these with regular cocoa powder. Just know you are seriously missing out. I found this at Walmart. You can find it at well-stocked Walmart's. The smaller ones might not carry it.
Vanessa gave me the recipe and I made these for Derek's work for his treat day. It was a huge hit! The recipe is pretty simple. It's a little different than most because it calls for using cold butter. You can make these into giant cookies if you want but I prefer my cookies smaller. I've included directions for both ways.
I hope you try these! They are AMAZING. Seriously this along with the Thick and Chewy Chocolate Chip Cookies are my favorite cookies of all time!
Dark Double Chocolate Cookies
Recipe slightly adapted from Annie's-Eats
Ingredients:
1 cup (2 sticks) cold, unsalted butter, cubed
1¼ cup sugar
2 large eggs
½ cup dark cocoa powder
2¼ cups all-purpose flour
¼ tsp. coarse salt
1 tsp. baking powder
2½ cups semi-sweet chocolate chips
1 cup (2 sticks) cold, unsalted butter, cubed
1¼ cup sugar
2 large eggs
½ cup dark cocoa powder
2¼ cups all-purpose flour
¼ tsp. coarse salt
1 tsp. baking powder
2½ cups semi-sweet chocolate chips
Directions:
Preheat the oven to 350˚ F. Line baking sheets with parchment paper or silicone baking mats. In the bowl of an electric mixer, combine the butter and sugar. Beat together on medium-high speed until light and fluffy, 2-3 minutes. Blend in the eggs one at a time, scraping down the bowl as needed. Mix in the cocoa powder until well blended. Add the flour, salt and baking powder to the bowl and mix on low speed just until incorporated. Fold in the chocolate chips. Transfer the dough to a work surface and knead briefly by hand to be sure the ingredients are well combined.

To make giant cookies divide the dough into 12
equal pieces or for regular size cookies just roll about a golf ball size
amount of dough. Roll each portion of
dough into a ball and just slightly into a disc. Place on the prepared
baking sheets, a few inches apart. Bake 16-20 minutes for giant cookies
and 9 to 11 minutes for regular sized cookies. Let cool on the baking
sheets 5-10 minutes, then transfer to a wire rack to cool completely.
So glad I brought these to you that day then! A new favorite recipe of mine too! And I seriously love that dark chocolate cocoa powder. I wish our walmart sold it!
