We just recently (and finally!) bought a second car. I feel so free now! I am no longer stuck at home. It's awesome being able to go wherever I need to go and visit family. One of my favorite things I have done was visit Derek at work to have a picnic for lunch. I brought these awesome sandwiches and we had so much fun relaxing together along with the kids and enjoying an awesome lunch.
Bacon, Tomato & Guacamole Grilled Cheese
Recipe adapted from Sweet & Savory
Ingredients:
Sandwich bread (or Focaccia bread)
Tomatoes, sliced
Bacon, cooked
Swiss & Sharp Cheddar cheese
Guacamole
Directions:
Place a nonstick skillet on the stove over medium-low heat. Assemble sandwiches- spread guacamole on both slices of bread, then top with tomato, bacon and cheeses. Butter the top of the sandwich and place butter side down in pan. Press sandwich and cook until golden brown on bottom. Butter the top of the sandwich and flip. Cook until golden brown. Repeat.
