Whole Wheat Dinner Rolls


These rolls are so good! I've made quite a few roll recipes before but once I made these Whole Wheat Dinner Rolls there was no need to keep experimenting. These rolls are perfect!  In the past I've preferred white rolls over whole wheat rolls but these are so light and fluffy they are far better than any white roll I've ever had.  These rolls are super easy to make too. 

I like to freeze some of the rolls then whenever I need a few for dinner I just take them out and warm them up! So I only have to make these rolls about every other month and we always have some when we want it.  I also love to pull one out of the freezer warm it up and put some butter and jam on it for a quick and yummy snack.

Whole Wheat Dinner Rolls
Recipe adapted from All Recipes
Ingredients:
2 packages active dry yeast (or 4 ½ tsp.)
2 ¼ cups warm water (110° to 115°)
½ cup plus 1 Tbsp. sugar
¼ cup shortening
2 tsp. salt
2 eggs
3 cups whole wheat flour
3 ½ to 4 cups all-purpose flour
¼ cup butter, melted

Directions:
In a large bowl, dissolve yeast in warm water. Add the sugar, shortening, salt, eggs and whole wheat flour.  Beat until smooth.  Stir in enough all-purpose flour to form a soft dough.  Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.  Place in a greased bowl, turning once to grease top.
Cover and let rise in a warm place until doubled, about 1 hour.  Punch dough down.  Turn onto a lightly floured surface; divide into four pieces. Shape each into 9 or 10 balls.  Place 1 inch apart on greased baking sheets.  Cover and let rise until doubled, about 25 minutes.
Bake at 375 F for 12-15 minutes or until browned.  Remove from pans to wire racks.  Brush with melted butter. Serve warm.
