I like to freeze some of the rolls then whenever I need a few for dinner I just take them out and warm them up! So I only have to make these rolls about every other month and we always have some when we want it. I also love to pull one out of the freezer warm it up and put some butter and jam on it for a quick and yummy snack.
Whole Wheat Dinner Rolls
Recipe adapted from All Recipes
Ingredients:
2
packages active dry yeast (or 4 ½ tsp.)
2
¼ cups warm water (110° to 115°)
½
cup plus 1 Tbsp. sugar
¼
cup shortening
2
tsp. salt
2
eggs
3
cups whole wheat flour
3
½ to 4 cups all-purpose flour
¼
cup butter, melted
Directions:
In a large bowl, dissolve yeast in warm water. Add the sugar,
shortening, salt, eggs and whole wheat flour.
Beat until smooth. Stir in enough
all-purpose flour to form a soft dough. Turn
onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to
grease top.
Cover and let rise in a warm place until doubled, about 1
hour. Punch dough down. Turn onto a lightly floured surface; divide
into four pieces. Shape each into 9 or 10 balls. Place 1 inch apart on greased baking sheets. Cover and let rise until doubled, about 25
minutes.
Bake at 375 F for 12-15 minutes or until browned. Remove from pans to wire racks. Brush with melted butter. Serve warm.
