I love to make sure my husband always has something to take to work for lunch. I often make different meals for him and freeze them so there is always something available if we don't have leftovers in the fridge. When we moved in I asked him for a short list of things he would like me to make a lot of and freeze so he could have it for lunch at work. These Bean and Cheese Burritos were one of his requests.
I was happy how fast it was to make and surprised how good it tasted. I loved how baking them in the oven made the outside a little crispy and the beans tasted so good and of course the cheese is always yummy. You can top them with anything you like or nothing at all.
Another thing is these are so much better than the bean and cheese burritos you can buy at the grocery store. I remember various times growing up eating those at my cousins house and I never could come to enjoy them. These are great for either dinner or to grab from the freezer.
Bean and Cheese Burritos
Recipe from Better Homes and Gardens
Ingredients:
6-8, 7 or 8-inch flour tortillas
1 cup chopped onion (1 large)
1 16-ounce can refried beans
1 cup shredded cheddar cheese (4 ounces)
1 cup shredded lettuce
1/3 cup bottled salsa
Optional: sour cream and guacamole
Directions:
Stack tortillas and wrap tightly in foil. Heat in 350 degree F oven for 10 minutes to soften.
Meanwhile, for filling, in a skillet cook onion in hot oil until tender; add refried beans. Cook and stir until heated through. Spoon about ¼ cup of the filling onto each tortilla just below center and to within 1-inch of the edge. Divide cheese among tortillas. Fold bottom edge of each tortilla up and over filling. Fold opposite sides in over filling. Roll up from the bottom.
Place on a baking sheet. Bake in a 350 degree F oven for about 10 minute or until heated through. Serve with lettuce and salsa.

Makes 3 or 4 main-dish servings.
*To Freeze: Place burritos on a baking sheet and place in freezer until frozen through. Put burritos in a freezer zip lock bag.
