Pizza Bites

I've had my eye on this recipe for a while now and was excited to finally make it.  I love pizza and any variation of pizza.  These pizza bites are easy to make and really fun to eat.  You just roll out the pizza dough, cut it into squares place the cheese and pepperoni on it and wrap it up!  I was worried mine would come out funny because not all my bites were very round but when it was done cooking they all looked round and yummy!

I know Derek really liked it because he kept eating it with out saying anything. That's always a good sign. :)  We ate this for a lunch but you can serve it as an appetizer or have it as a snack or however you please. I think it'd be a fun party food too.

You could also use 2 cans of refrigerated pizza dough if you'd like. And you could always add different ingredients to the bites, such as italian sausage or vegetables.

Pizza Bites
Recipe from Annie’s Eats
Ingredients:
½ batch pizza dough  (enough for 1 pizza)
4 oz. mozzarella cheese, cubed (about 20-24 pieces)
Sliced pepperoni
For topping:
Olive oil
Italian seasoning
Grated Parmesan cheese

Directions:
Preheat the oven to 400˚ F.  Lightly grease a 9-inch pie plate or cake pan.  Divide the pizza dough into 20-24 roughly equal sized pieces.  Take one of the dough pieces, top with a cube of cheese and a slice or two of pepperoni.  Pull the edges of the dough around the fillings and pinch closed.  Place seam-side down in the baking dish.  Repeat with the remaining dough pieces.

Lightly brush the tops of the dough balls with olive oil.  Sprinkle with Italian seasoning and grated Parmesan cheese.  Bake for 20 minutes, or until the tops are golden brown.  Serve warm, with dipping sauce as desired.

  1. We used bite-size pepperoni, which really helped get all the flavor in each bite. We love these!
