Three Cheese Garden Pizza

Check out my tomato!  This is our first tomato from our garden this year and our first thing we've grown together. We were pretty excited to pick it.  Our two tomato plants are growing like crazy and we are excited to be able to use all the tomatoes as they ripen.  We both love tomatoes and have a lot of ideas of what to do with them.



Using this tomato and other ingredients I made one of my favorite recipes; Three Cheese Garden Pizza.  This recipe is from Pampered Chef. Last year my friend had her first Pampered Chef show and I was excited to attend.  Derek even came with me!  She made this pizza and we loved it and I've made it quite a few times since.  I love all the vegetables on it and just how good it tastes! It also has zucchini, onions and mushrooms. Then of course the 3 cheeses. And I love cheese!  Yummy vegetables, 3 cheeses, pizza... you can't go wrong! 




Three Cheese Garden Pizza
Recipe slightly adapted from Pampered Chef
Ingredients:
1 tsp plus one Tbsp vegetable Oil, divided
1 Pkg 13.8 oz pizza crust (or you can make your own :)
2 garlic cloves, minced
¼ cup Parmesan Cheese grated
1 cup shredded cheddar cheese
1 cup shredded Mozzarella Cheese
1 tsp Italian seasoning
1 small onion 
1 medium zucchini
2 tomatoes
1 cup mushrooms

Directions
1) Preheat oven to 400 degrees.  Lightly spread 1 tsp oil over pizza pan. Unroll dough onto bottom of pan, gently stretching and pressing dough to cover bottom. Drizzle remaining 1 tbsp oil over dough. Press garlic over dough then spread evenly. Bake crust 7 minutes.

2) Meanwhile grate Parmesan Cheese. Combine cheeses and Italian seasoning. Thinly slice onion, zucchini and tomatoes crosswise. Thinly slice mushrooms. 

3) Remove pan from oven. Sprinkle half cheese mixture over crust; layer evenly with onion, zucchini, tomatoes and mushrooms. Sprinkle with remaining cheese mixture. Bake 15-18 min or until crust is golden brown. 

*Notes: If you don't like your onions slightly raw (like me) saute them before hand.
Also, if there is a vegetable you don't like it's ok to leave it off. I don't use mushrooms in this recipe.
