Peanut butter is good but when you combine it with chocolate- WOW! They complement each other and it's a match made in heaven. These cookies are so good. It's like taking the best chocolate chip cookies ever and adding a hint of peanut butter to it. There is no question there is peanut butter in these cookies but I like that it's more just a nice subtle flavor than overpowering.
I made these cookies for my baby nephew's baby blessing lunch. They were a huge hit and people kept going back for seconds, and thirds...
This recipe is simple and the results are amazing. This is now one of my top favorite cookies of all times. I loved the soft and chewy texture of it and of course the chocolate and peanut butter in it. mmm
Puffy Peanut Butter Cookies with Chocolate Chips
Slightly adapted from howsweeteats
Ingredients:
2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 stick of butter, melted and cooled
6 tablespoons of creamy peanut butter, melted and cooled
1 cup brown sugar
1/2 cup sugar
1 egg + 1 egg yolk, at room temperature
2 teaspoons vanilla extract
1 1/4 cups chocolate chips
Directions:
Preheat oven to 325 degrees F. Add butter and peanut butter to a microwave safe bowl, and heat in 30 second increments until melted. Let cool completely.
Mix the flour, baking soda and salt in a bowl and set aside. In another bowl, mix the cooled butter/peanut butter and sugars until they are combined. Add the egg, egg yolk, and vanilla and stir until mixed. Gradually add flour and mix until a dough forms – it will look crumbly at first, but it will come together. Fold in chocolate chips.
Shape the dough into a ball the size of a golfball. Place on a baking sheet two inches apart and bake for 10-12 minutes or until the edges are slightly brown. The centers should be soft and puffy. Do not over bake. Let cool completely then enjoy!
These look amazing! I'm going to make them, and because they are on here I know I have nothing to worry about! Thanks Becky!
