Buttermilk Syrup


I don't like maple syrup very much and so when we had pancakes the other day I decided to make buttermilk syrup.  It's super easy to make plus fun too. It's fun to watch the color change to a caramel texture.  I love the taste of it. It goes great with pancakes, German pancakes, waffles etc. It's honestly more like caramel than syrup but hey that's just fine with me!  


Buttermilk Syrup
Recipe adapted from Taste of Home
Ingredients:
1 1/2 cups sugar
3/4 cup buttermilk (or scant 3/4 milk + scant 1 Tbsp. vinegar or lemon juice, let sit for 5 minutes)
1/2 cup butter
2 Tbsp. corn syrup
1 teaspoon baking soda
2 teaspoons vanilla extract


Directions:
In a large sauce pan combine all ingredients except the vanilla extract; bring to a boil. Boil for 7 minutes. Remove from heat; stir in vanilla.


Yield: About 2 cups.
