Carrot Pancakes

My toddler is a very picky eater.  I'm always trying new ways to help him eat better and so one day I thought of making carrot pancakes. I had never heard of them before but quickly found a great recipe to try out.  It was so easy to make. You just place all your ingredients in a blender, blend it and it's ready to be cooked!  I made them into Mickey shapes for him since he loves Mickey Mouse. He thought it was so cool and called it Mickey bread. And you know the best part?




He ate it all up! YES!  I made the rest of the batter and shaped them all into Mickey shapes and put some in the freezer so I can pull them out as needed.  I am so glad he liked it. And I also liked it very much. These were much better than any plain pancake I've had before. You almost don't even realize it has carrot in it. But if you look closely you can see the orange specks. I loved the flavor of this. I will be making this again!


Carrot Pancakes

Ingredients:
1 3/4 cup milk
2 eggs
1/4 cup butter, softened
4 medium carrots, chopped
2 cups flour
2 Tablespoons baking powder
1 teaspoon salt
4 Tablespoons sugar
2 dashes nutmeg
2 dashes cinnamon


Directions:
Pour milk, eggs and butter into blender. Mix briefly.  Add carrots and blend until there are no chunks.  Add flour, baking powder, salt and sugar; mix until all is blended smoothly.  Add nutmeg and cinnamon and blend for 1 minute.  If mixture seems to thin add a little more flour.  


Heat a pan to medium and spray with non-stick cooking spray and pour on batter (about 1/3 cup each.) Cook for a few minutes each side until it's golden brown and enjoy!


*Note: If you want to make Mickey shapes just make the circle pancake as usual and using a spoon drop batter for ears.
