Corona Turkey Taco Mix

I'm always looking at new recipes but I love it when my husband sends me some to try.  Last week he sent me an e-mail with this recipe.  During lunch his co-worker had this and it smelled so good he asked for the recipe. He told her if I blogged about it we'd name it after her so here I am doing just that! Plus I think it sounds cool: Corona Turkey Taco Mix!


This recipe is super awesome. It's easy to make, tastes really good, uses turkey meat which we all know is healthy for you (especially if you watch The Biggest Loser) and is loaded with vegetables. Oh and one more thing- there are so many different ways you can use this!


Here are some ideas on how you can use this:
-Burritos
-Tacos
-Taco Salad
-Nacho's
etc!


And I'm sure it would freeze really well too. As you know we like to freeze a lot of things around here.  You could make a lot of burritos out of this and freeze it.


I've been enjoying these leftovers by warming up corn tortillas in the toaster oven and making little tacos out of it. It's super good! Thanks Natalie for the recipe!


Corona Turkey Taco Mix

Ingredients: 
1 tablespoon canola oil
1/2 yellow onion, diced
1 red pepper, diced
1 yellow pepper, diced
1-1.25 lbs ground turkey
1 packet of taco seasoning (or homemade)
1 can corn, drained
1 can black beans, drained
optional: cilantro, chopped

Directions:
Add the oil to a large skillet at medium heat. Once the oil shimmers, add the onion and peppers and sauté for about 3-4 minutes.  Add the turkey and stir occasionally. Drain liquids after about 5 minutes, then add taco seasoning. Continue until turkey is browned, then add the corn and black beans. Add cilantro if using.

Use for taco salad, tacos, soft tacos, burritos, nacho topping, etc…
