Levi, my toddler, is a picky little guy. He loves eating ice which is fun but has no nutritional value so I thought up a fun and healthy idea for him to still enjoy "ice." We call it, "Pink Ice." He thinks it is so cool! It's just strawberry yogurt plus finely grated carrots.
The possibilities of what you can do with this idea are endless! You can use any type of yogurt and mix in whatever you want. You could add in more fruit or other vegetables you think would work. I know carrots and yogurt might seem like an odd combination but it really works well together! I eat this with him and I really like it too. And because the yogurt is frozen you don't even notice the texture of the finely grated carrots. It's super awesome and makes me happy to see my son eating more vegetables.
I finely grated about half a carrot and add it to about 1 cup of strawberry yogurt.
Then I spread it out, freeze it, cut it into squares and serve it!
It's a hit!
Frozen Yogurt Squares
Love to be in the Kitchen Original Recipe
Ingredients:
Yogurt (any flavor)
optional mix ins: finely grated or chopped fruits or vegetables, pureed fruits or vegetables etc.
Directions:
In a small bowl combine desired amount of yogurt and mix in together. Line a small baking sheet (or even a plate) with wax paper. Evenly spread out yogurt mixture. Place in freezer until frozen through. Cut into squares. Place in a bowl and serve!

ReplyDeleteThis looks great. I have a hard time eating yogurt (I just don't like many milk products) but I can totally eat it frozen for some reason and I never thought about putting veggies in it.
