Breakfast Sandwiches

The perfect breakfast. Seriously. These are my father-in-law's specialty and we've also made these many times.  As simple as these are to make there are a few important steps to make it perfect.  I love the toasted slightly crispy English muffins, the slightly melted cheese along with a perfectly cooked egg and ham to top it off.  You could also make these using sausage or bacon.  


I love to make a dozen of these at a time and freeze them. Then when you need a quick breakfast (or lunch or dinner) you can just pull it out of the freezer, reheat it and you have an amazing breakfast!  And these keep you full for hours so it's perfect for busy days.  

1. First you split open the English muffins, lightly butter them and toast it on a griddle or pan.


2. Quickly place a piece of cheese on one side of the English muffins. This will slightly melt it.  


3. Place the ham quickly on the hot griddle/pan long enough just to warm it up.  Then place on the English muffin. (You can also use bacon or sausage and lunch meat ham works just fine as well.)


4. Now the most important step is to cook the eggs. You can cook it how each person likes it. I like mine very slightly runny and Derek loves his very runny.  As soon as you break the egg, the egg whites might run so use a spatula to help keep the eggs in a circular shape. Season with salt and pepper.


5. When the egg looks like this it is time to flip! Press down slightly so the egg yolk slightly flattens. 


6. As soon as eggs are cooked as desired place the eggs on top of the cheese to help the cheese melt a little more.

7. Put the two halves together.


8. Enjoy the best breakfast!


*Popular condiments are mayo or green or red Tabasco sauce.


*To freeze: Let the sandwiches cool, then wrap each tightly in plastic wrap.  Put the wrapped sandwiches in a labeled freezer bag.  When ready to eat unwrap the sandwich and loosely wrap in a paper towel and microwave for 1 minute.  Cook longer if needed.  If you have more time, bake in oven or toaster oven at 350 degrees until warmed through.

  1. Dan's family makes these for a group Conference breakfast. We love them! We usually do scrambled eggs and sausage though.

  2. This is definitely my kind of breakfast sandwich! I love the idea of freezing them for later. I could definitely use that on busy mornings:)
